2 Jars White Beans (12 oz. each) Cannellini, or White Navy Beans
1 Onion
2 Carrots
2 Stalks Celery
1/3 cup Diced Tomato (fresh tomato, or any canned tomato product will work)
Olive Oil
Chicken Stock
Herb de Provence
Bay Leaf
3 Cloves Garlic
Black Pepper
Salt
1 Bunch Fresh Italian Parsley
